Okonomiyaki, a popular savory pancake dish from Tokyo
Ingredients:
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp sugar
- 2/3 cup dashi (Japanese soup stock) or water
- 2 eggs
- 2 cups finely shredded cabbage
- 1/4 cup thinly sliced scallions
- 1/4 cup chopped shrimp or squid (optional)
- 4 slices bacon or pork belly, chopped (optional)
- 1/4 cup mayonnaise
- 1/4 cup okonomiyaki sauce (a sweet and savory sauce, available in Asian markets)
- 1/4 cup thinly sliced nori (dried seaweed)
- Bonito flakes (dried fish flakes), for garnish
- Vegetable oil, for frying
Instructions:
- In a large mixing bowl, whisk together flour, baking powder, salt, and sugar.
- Add dashi or water and eggs, and whisk until smooth.
- Add shredded cabbage, scallions, shrimp or squid (if using), and bacon or pork belly (if using), and stir to combine.
- Heat a large non-stick skillet or griddle over medium-high heat. Add enough vegetable oil to coat the bottom of the skillet.
- Spoon 1/4 of the batter onto the skillet, spreading it out to form a 6-inch pancake. Repeat with the remaining batter, making 4 pancakes in total.
- Cook the pancakes for 4-5 minutes, until the bottom is golden brown and crispy. Carefully flip the pancake over using a spatula, and cook for an additional 4-5 minutes on the other side.
- Transfer the pancakes to a serving plate, and drizzle with mayonnaise and okonomiyaki sauce.
- Sprinkle with sliced nori and bonito flakes.
- Serve hot and enjoy!
